But probably the most important and interesting feature of La Reserve is its proprietor and manager, the French gentleman who lives and breathes as the heart and brain of this cozy hideaway, Bernard Etcheverry himself.

Bernard Etcheverry has virtually mastered the art and science of true dining. Guests and visitors leave La Reserve smiling and happy with a gastronomic experience almost impossible to forget. In its romantic tropical setting, La Reserve offers many ways to tickle the palate, nourish the belly and body, and give pleasure to the soul. Specialties include: lobster prepared in about a dozen ways, shell fish platter, parma ham, confit de canard, goose liver, smoked salmon, chateaubriant, caviar and crepes suzette.

French Basque cuisine and landes specialties (goose liver pate and confit etc...)also some fresh seafoods, lobsters (cheap in Philippines). Caviar and of course our cellar wine cave of 3000 bottles of Bordeaux, Burgundy, Calvados, Armagnac, etc.. Havana cigars and the smile of the owner and staff.
